Bag Meal Recipe: Chicken and Green Chile Soup

This recipe is actually one my brilliant mother invented one day. It is such a delicious, quick, and hearty meal. You can use all sorts of different things in it, so if anything doesn't sound like something you would eat, swap it out for something else. My mom uses great northern beans and pinto beans. I like black beans and kidney beans. And you can tweak it however you like!


Chicken and Green Chile Soup

2 cups water
1 can black beans, drained
1 can kidney beans, drained
1 can diced green chiles
1 can green enchilada sauce
1 can chicken breast

Resealable bag:
1 tsp garlic powder
2 tsp chicken bouillon
2 tbsp minced onion

Combine all ingredients in a large pot. Cook over medium heat for 15-20 minutes.

In times of plenty, this is great with sour cream, tortilla chips, and cheese on top.

I made this last night. It was good. We did black and pinto beans. It's going into our bag meals.

I also like to put in garbanzo beans!
